We drove to the River Suck in Ballyforan yesterday evening… warm sun, boat, dinner… what more could you want?
Peace, tranquility…
We rowed up the river, exclaiming at the perfect reflections…
The only sound being two swans who flew overhead…
I understand Monets fascination!
We pulled up here, tying the boat to an old hawthorn tree…
Only us and the cows (and the swans overhead- they were doing laps it seemed)
And dinner! YUM-MEEE! I fried chicken breasts with some bacon bits, put them in the bottom of the casserole dish; then made stuffing with some onion sauteed in butter, breadcrumbs tossed in, mixed herbs and a grated potato (I think I also added some grated cheese); put that on top of the chicken then topped it all off with roasted potato wedges- wrapped in the wool picnic blanket, it kept warm until we were ready to eat. Perfect for an evening picnic!
Fergal even brought his lounger (and the children sat on it-all four of them)

Our little one and her daddy held hands on the way home…
And as we came back to the slipway, were awed by the sight of Ballyforan Bridge, with the sun setting behind it…
We felt really and truly blessed.
You did our beautiful country credit with those fantastic photographs. Dinner also looked scrummy yummy. I am hungry now ,can almost taste it,but can’t . DARN!!
