Chocolate Banana Bread

I should be painting, but our smallest boy decided that a short sleep was the order of the day today and whilst I might dabble a little in a while, I thought I would put together a blogpost and keep to my “schedule” (yay!!)

A friend of mine (she was actually my lovely midwife for our last two children) had her third baby recently and so I decided to make some lasagne (when I had my babies and someone would make dinner for us, I was always so grateful) and, because I had several bananas past their prime thanks to one bite taken from each of them, (James!! I’m looking at you kid!) I also decided to make a chocolate-banana cake, taken, if I remember correctly, from a Clodagh McKenna recipe (I actually had enough bananas for three cakes. And we have so much chocolate in the house right now thanks to Christmas feasting)

I love the chocolate-banana combo, and warm from the oven, this is an outstandingly tasty, moist cake. I made it with spelt flour too, in order to feel a bit virtuous and to cancel out those naughty chocolate bits (tut tut and all that)

Chocolate and Banana Bread

 Preheat the oven to 180’C, line a 2lb loaf tin.
In a double boiler, melt 75g of chocolate.
Cream together 110g of soft butter and 125g caster sugar.
Add: 2 eggs and 125g of self raising flour,
then: 1 level teaspoon of baking powder,
1 rounded teaspoon of cocoa, 2 bananas
and then stir in the melted chocolate.
Cook for 50-55 minutes, and try, do try! – to wait until it has cooled a little before cutting, although we are not adverse to eating chunks of steaming hot, chocolatey cake 🙂
